GYM memberships & basted Cod

Fried Ginger, Garlic, Lime Juice
For Christmas I asked for a gym membership. No that's not a joke, I stuffed myself with truffles, seconds and turkey over the holidays. 

I just want to point out, that it is not a new year resolution as I haven't resolved to actually do anything, just behave myself after intentionally gorging in December!

So with the positive reinforcement that I now possess a gym membership and a growing waistline, I kick started the new year with a delicious fresh fish dish of basted Cod with a Thai persuasion! 


While eating it (and smelling) it, I was reminded of the week we spent in Prachuap Khiri  Kahn in late 2012. Stu and I laid by the sea, rode pushbikes and indulged in fresh fish and seafood everyday and did absolutely nothing else. It was such a good time :)

It's one of those small pleasures in life moments, when a dish or a smell can stop you in your tracks and reminds you of a specific point in time.... Well, I always find it special.


Drizzle marinate on cod and fold foil over
So here it goes recipe no1. for 2014!

Cod Basted in Lime Juice:

Fry off 1 spring onion, 1 clove of garlic, 1cm of ginger, with salt & pepper, chop up a few sprigs of fresh coriander in the juice of 1 lime and a table spoon of olive oil

Drizzle the mixture over the cod fillets & place in the oven wrapped in foil for 25 minutes, check at about 10 minutes and expose the fish to the oven air, ensure to drizzle the juice back over fish so it doesn't dry out.

Served with:
Boiled potatoes with vinegar, basil pepper, parsley tossed and set to cool. Also served with blanched snowpeas & beans.
